Deaver Vineyards Individual Molten Chocolate Cake

During the annual Behind the Cellar Door event at Deaver Vineyards and Winery, we celebrate our fine wines, particularly our Ports, and chocolate lots and lots of CHOCOLATE! We hope you enjoy this truly decadent chocolate cake. Serve individually with a bit of our Merlot Port and you'll understand why our guests really like it.

Ingredients:

4 (1 ounce) squares of semi-sweet or dark baking chocolate
1/2 cup butter
1 cup powdered sugar
2 eggs
2 egg yolks
6 tablespoons flour
Whipped cream for topping

Method:

Pre-heat oven to 425 degrees F.
Butter 4 custard cups (3/4-cup) or small souffle dishes

Melt chocolate and butter in a sauce pan over medium heat. Stir with wire whisk until is completely melted. Stir in sugar until well blended. Whisk in eggs and egg yolks. Stir in flour. Divide batter between prepared custard cups.

Place on baking sheet and bake 13 to 14 minutes or until sides are firm but center is soft. Let stand one minute. Carefully run a small knife around the edge of cakes to loosen. Invert cakes onto dessert dishes. Top with whipped cream and a sprinkle of powdered sugar, serve immediately.
